Get Down to the Basics, Just Before the Holidays!
Home Cooks Learn to Turn the Heat Up at Southborough School
(Southborough MA) – In response to the demand by novice cooks to revive the art and craft of home cooking, Culinary Underground School for Home Cooks is pleased to offer the popular Very Basic Series, now held at its brand-new 21 Turnpike Road/Route 9, Southborough MA location. The six-week adult foundation course starts Wednesday, November 3, 2010, 6:30PM to 10:00PM. Space is limited and registration is first-come, first-served. The cost is $375.
“This is our core series for students who want to preserve the tradition of home cooking,” stated Chef/Director Lori Leinbach. “We cover all the important steps and match them with recipes that are simple, fresh, and fast. Each week, students learn, practice, and sample their results. Now in our brand-new location, we’re thrilled to have the space for bigger classes. And, we also have space for a small retail area stocked with the kinds of kitchen gear we use in classes. Just in time for the busy holiday season, we’ll be cookin’ up some serious fun at Culinary Underground.”
This evening series – which runs from Wednesday, November 3rd to Wednesday, December 15th — introduces novice adult cooks to classic cooking techniques that are the building blocks of fine cooking. In each class, students prepare a complete menu, from appetizer to dessert. As the series progresses, so will student confidence, especially when using what is learned in one’s own kitchen. The six foundation topics are: Equipment and Knife Skills, Moist Heat Cooking, Soups & Stocks, Dry Heat Cooking, The Other Stuff, and Baking. Menu items created by students have included Potato-Leek Soup, Classic Risotto Milanese, Pork Loin with Pinot Noir Reduction Sauce, Quinoa Salad with Fresh Pineapple and Cashews, and Vegetarian Chili with Cornmeal Dumplings.
Registration for the class is first-come, first-served and completed online at www.culinaryunderground.com, or by calling 508-904-6589.

About Culinary Underground School for Home Cooks (CU)
Culinary Underground School for Home Cooks is committed to furthering the art and craft of home cooking through engaging and educational hands-on and demonstrations classes. Using the best seasonal ingredients, mastering techniques, minimizing prep, and maximizing flavor are the focus of our classes. We believe that good eating and breaking bread with others are two of life’s greatest pleasures, and are at the heart of everyday cooking for family and friends. We share with our students a growing concern of what is in our food and where it comes from. To that end, we support small, local, organic farms and dairies, seek out area restaurants whose chefs cook locally, and invite those chefs, farmers, and purveyors into the classroom to share their knowledge and ideas with our students. Located at 21 Turnpike Road/Route 9, Suite E, Southborough MA 01772, the school was founded in 2004 by Chef/Director Lori Leinbach, an experienced educator and personal chef. The staff of four culinary experts teaches children and adults in small classes of 8-12 persons, Monday through Friday, daytime and evenings; special classes and events are also held on weekends. CU students of all levels and interests come from as far as CT, NH, and RI, as well as from Central and MetroWest Massachusetts.
