AT CULINARY UNDERGROUND SCHOOL FOR HOME COOKS
Monthly Southborough Workshop Features Menus Committed to
the Art & Craft of Vegetarian Cooking
(Southborough MA) – In response to a groundswell of interest in vegetarian cooking, Culinary Underground School for Home Cooks is pleased to offer the popular Vegetarian Tuesday Series once a month throughout 2011. The next installment of this creative series – The French Vegetarian – is slated for Tuesday, February 8, 2011, 6:30 PM to 9:30 PM at the school’s brand-new location: 21 Turnpike Road/Route 9, Southborough MA, and registration is first-come, first-served. The cost is $75.
Vegetarian Tuesdays introduces home cooks to classic cooking techniques that are the building blocks of fine vegetarian cooking. In each workshop, students prepare a complete menu, from appetizer to dessert. Students will gain confidence in planning and preparing healthy and delicious vegetarian meals.
“It may seem that vegetarianism is the antithesis of French cuisine, but not so!” confirmed Chef/Director Lori Leinbach. “Being a vegetarian in France is not that difficult, with the culinary emphasis on fresh vegetables. We’ll apply classic techniques to seasonal ingredients for a typical – and ethereal – menu. We give options for ovo-lacto and vegan versions of the same recipes.”
The February 8th workshop will include the following menu items, which students will learn, practice, and sample:
Charred Fennel Soup with Herb Gremolata
Vegetable Torte with Puff Pastry Crust
Bruléed Rice Pudding

The all-new Culinary Underground School for Home Cooks can be found at 21 Turnpike Road, on the westbound side of route 9 in Southborough, near the Southborough/Framingham town line in the Brickyard Square plaza.
To reach Culinary Underground going east (toward Boston) on Route 9, make a U-turn at the Framingham Technology Park traffic light shortly after the Route 30 exit. Get in the right lane and look for the Brickyard Place sign on the right as you cross into Southborough. To reach Culinary Underground going west (toward Worcester) on Route 9, go through the Framingham Technology Park traffic light and look for the Brickyard Place sign on the right as you cross into Southborough.
