How to buy fish, what to buy that’s safe and sustainable, how to prepare it: we cover all of those in our sustainable seafood workshops. Tonight, we work with fish and shellfish from the freezer. A lot of people eschew frozen fish, thinking the fresh stuff is superior. Not so! It’s great to have steaks and fillets tucked away, and it’s quick and easy to prepare them beautifully. Eat more fish!
